The grapes are manually harvested between early and mid-September. Then, they are vinified through destemming and soft pressing. Fermentation lasts 15-20 days in stainless steel tanks, at a controlled temperature of 16 °C and in the absence of oxygen, using selected yeasts. The wine then ages for 3 months in stainless steel.
Technical notes about Animé, white wine
It is a wine with a fresh and fruity taste, rich of mineral notes. It has a bright yellow color and an intense aroma. Thanks to its naturally petillant characteristic, it is suitable for aperitifs.
Wine & FoodPairing
This wine should be served at 9-10 °C. It is ideal as an aperitif, but it is also excellent with appetizers, fish dishes and fresh cheeses.
